Palo Cortado. Sounds like a Spanish coffee. But is a Sherry type. Made from wine that matured under a layer of Flor. This is a natural yeast fungus that lies on the wine and blocks it from oxygen. But in the case of Palo Cortado, that layer of Flor disappeared halfway through the ripening process. And the wine still oxidized.
