Roquefort is a very spicy blue cheese. You need to counter that with something. Preferably a strong sweet wine. Port is an excellent choice, but it can also be another white or red sweet wine such as a Beerenauslese or an Icewine.
Roquefort is one of the oldest French cheeses. It is made from sheep's milk. Roquefort may only be called Roquefort if it has matured in the caves of the Combalou Mountain in the town of Roquefort sur Soulzon. Roquefort has a distinctive, very firm, spicy and somewhat salty flavour.
