Fourme d'Ambert can be wonderfully combined with wine if you choose a slightly sweet white wine with a velvety mouthfeel. This can be a classic French wine but also a German or Austrian Spätlese or Auslese.
Fourme d'Ambert is a blue-veined cheese from the town of Ambert in the mountains near the French Auvergne (just west of Lyon). An ancient cheese that was already made here in the seventh century. It has the shape of a drum, which is also where this cheese gets its name from; Fourme means drum in French. It matures for two months and then gives a smooth structure and a fruity, slightly spicy taste.
