Tbilvino Rkatsiteli

On a wine tour in Georgia we drank his white Rksatsiteli with winemaker Zura Margvelashvili. Under a parasol, in the middle of his vineyard at the foot of the Caucasus. We ate an Adzhapsandali, a spicy Georgian dish with grilled eggplant, peppers and lots of fresh herbs. "Mine is the crispiest Rkatsiteli in the country!" smiled Zura.

Could very well be true. Because it is certainly crispy fresh. Bursting full of green apples and young pears. Pure and light-footed. The thirst-quenching type that doesn't attract attention but rather puts your cooking skills in the spotlight. That could also be a fresh salad, grilled sea bass or pasta with pesto.
