This is what good wine from the Stavroto grape tastes like

Stavroto is a fairly unknown Greek wine grape that you can really only find as part of a blend: the red Rapsáni, a wine made at the foot of Mount Olympus. Rapsáni is a powerful, spicy red wine with quite a bit of tannin.

Rapsáni lies near the Greek city of Thessaloniki, in the Thessaly wine region. It is one of Greece's 26 protected appellations. The appellation rules require the wine to be made from equal parts Xynómavro, Krasato and Stavroto. In Rapsáni these usually grow crisscrossed together in the same vineyard. Stavroto has the reputation of being the 'friendliest' of the three, less alcoholic and with less tannin. Its contribution is to soften the wine somewhat.
